Have you had a Pumpkin Pie Martini? Pie in a glass with a bit of booze sounds too good to be true, then you call it skinny? What? Now you think I’m crazy, but I’m not! However I do feel like Houdini for having figured out this recipe. I actually came up with this skinny Pumpkin Pie Martini last year, but it’s way too good to try to do over or leave out of this year’s celebrations. So if you tried it last year, let me remind you of the perfect way to enjoy your Fall celebrations. With Halloween and Thanksgiving both on the horizon, it’s the right time to go hunting for these ingredients, as it will serve as the perfect garnish on your already fantastic events. Serving a desert style cocktail is genius because it tastes like pie, but satisfies the cocktail craving as well. Your guests will be so impressed.
Martini Trickery to be Aware of…
Don’t be fooled and think you can stir up any googled Pumpkin Pie Martini recipe – most of those pack in the calories in the most unassuming way, easily topping 350 calories per tini using high sugar pumpkin flavored alcohols and lots of heavy creamy stuff. That’s more calories than you would have had if you’d just served the pie. Not clever or genius. And while I’m sure your guests will still thank you, their waistlines and blood sugar levels may not. So offer this one up, SkinnyTini’s version of the Pumpkin Pie Martini — your guests will be amazed they get a cocktail fix and their desert cravings satisfied for under 150 calories with this treat.
The Skinny Pumpkin Pie Martini
- 4 oz Smirnoff Vanilla Vodka
- 1 oz Torani Sugar Free Pumpkin Pie Syrup
- 5 oz Flax or Light Almond Milk
- 2 Tbsp Pumpkin Puree
- Pumpkin Pie Spice to taste
- Diet Ginger Ale (optional)
Optional Garnish: Rim the glass in graham cracker for 10 calories.
Calories: This recipe will make two 5 oz martinis with 136 calories each.
Directions:
- Dip the edge of a clean martini glass in water and roll in crushed graham crackers to rim the entire glass.
- Add all ingredients to a cocktail shaker filled with ice and shake vigorously for at least 10 seconds (until the puree is completely dissolved).
- Strain into the prepared martini glass and serve or top with diet ginger ale if prefer just a tad sweeter.
Skinny TidBit: Just to tag onto what I already stated above, this is a unique and well engineered SkinnyTini. I’m starting to think I’m an incredibly gifted Skinny Mixologist! To come up with this recipe I did a little research and learned that all the recipes I found all had at LEAST 350 calories and were loaded with creamy, sugary, not-so-skinny things like whole cream, pumpkin spice liqueur, cinnamon schnapps, caramel, whipped cream, pecan liqueur, café au lait iced coffee, butterscotch schnapps, kahlua, half-and-half , creme de cacao – essentially every SkinnyTini no-no in the book! This SkinnyTini is rich, smooth, sweet – yet still light and would you believe it, really tastes like pumpkin pie. But again, with half the calories. Yahoo!
