In Australia, the Festive Season is HOT! You will need something cool and refreshing and PARTY SIZED! Here is one I whipped up for a Birthday Party recently.
Strawberry & Pineapple Mojitos - Jazz up your next party with a signature cocktail!
I recently celebrated a birthday and while I don't really need an excuse to make cocktails, they are always better shared with friends. I decided to create a cocktail station of sorts, because a dessert buffet is so last year. And my party sized cocktail of choice..... Strawberry & Pineapple Mojitos.
I bought out my very best crystal (plastic cups from Kmart) for the occasion and cut up some garnishes. I also layed out some of my homemade Cocktail Sugars for a little bit of glitter.
Party sized cocktails are easy. Use fresh ingredients in season and keep it simple so that you can kick up your heels.
Ingredients
Makes about 3 Litres per batch.
1 punnet fresh strawberries
1 tin pineapple pieces, in syrup (you could use fresh pineapple)
1 Litre Pineapple juice
1 Litre Lemonade
1 bunch Fresh Mint
Lime Juice
500ml Bicardi Rum
Ice
Strawberries and Pineapple pieces for garnish.
Method
To the TM bowl, add a handful of mint, juice of a lime, pineapple pieces and strawberries.
Puree on speed 6 for 30 seconds.
To a large drink dispenser, add half the puree (you will have enough for a second batch).
The next part is about balancing your taste preferences, Add the pineapple juice and rum, topping up with Lemonade. Taste the drink and adjust as required.
Add ice to the dispenser and layer fresh mint and strawberries.
Set your cocktail buffet with cocktail sugar, lime wedges, fresh mint and garnishes.
To serve, use fresh lime wedges to rim your cup and then roll into cocktail sugar, pour your mojito and garnish with a strawberry & slice of fresh pineapple.
Seriously, Cocktail buffets are totally a thing.
