Today I wanted to focus on another spring recipe that could also be used for spring entertaining.  The weather in Seattle has been amazing and I have been craving tropical drinks.  The mojito is one of my favorite cocktails to drink on vacation.  When I was in Barcelona I had the most amazing mojitos the balance of ingredients was spot on and the crushed ice made the drink. This recipe is a spin on the classic mojito because it contains strawberries and rhubarb.  The strawberry and rhubarb in this drink provides a tangy yet sweet boozy drink.  I like this drink because it makes me feel like I am on vacation.  It’s also a special treat because it is so pretty with the fresh strawberries and mint leaves.  Make this mojito today and transport yourself somewhere dreamy!

 

Recipe: Strawberry Rhubarb Mojito

Ingredients

2 ounces of white rum

1 lime, juiced

1 teaspoon strawberry jam

1 tablespoon rhubarb simple syrup (*see recipe below)

1 strawberry chopped

8 mint leaves broken up

Club soda for top off

1 cups of ice

Garnish: lime

Instructions

Fill cocktail shaker with lime juice, strawberries, strawberry jam, rhubarb syrup, and mint leaves

Muddle mixture until ingredients are married together

Stir in rum

Fill serving glass with ice

Add mixture to serving glass and top off with club soda

Pour mixture into serving glass

Garnish with lime

Yields: 1 serving
