For our first post we are tasting new booze brought you by a distillery which recently opened up in Perth, Western Australia by the name of Hippocampus Metropolitan Distillery. First cab off the rank is the house vodka.
Tucked away in a suburban street in West Perth lies a 450 litre shiny copper still shipped over direct from Germany. Upon my first first to the distillery, the distinct smell of the wheat-mash making its way through the coils of still increases the levels of intrigue as you stand in-front of this massive machine running at full steam with the end result of a clear liquid streaming into a holding tank.
Biodynamic Wheat
Made from a organic wheat crop located a couple hundred clicks from Perth and paired with an organic yeast sourced from the USA, this vodka is distilled several times and bottled unfiltered. The result is a vodka which is highly textured with soft sweet wheat and floral notes coming though the nose. On the first sip, a bready savoury start which leads to the taste doughnuting between charred wheat and a textured mouthfeel finishing with a slight kick.
With more small batch booze in the making with rumours of a rum and/or whiskey, this place makes a nice addition to the local drinking scene.
East 8 Hold Up
40ml Hippocampus Vodka
20ml Fresh Pineapple juice
15ml Aperol
15ml Sugar Syrup
15ml Fresh Lime juice
5ml Passionfruit syrup
Combine all ingredients, shake hard and strain into glass, garnish with Pineapple and Lime.
