The "Celery Smith" Cocktail

Inspired by Mr. & Ms. Smith bitter sweet relationship, this concoction brings together the sweetness of fresh Pineapple with the veggie salty bitterness of the Celery & salicornia (salty fingers) into the perfect balance.
Food Pairing: salmon & risotto.
"CELERY SMITH"
50ml Sipsmith
40ml fresh lime
1 pineapple slice
1 celery stalk + 1 basil leaf
Dash grapefruit bitters
15ml sugar syrup
1 egg white
Pinch of salicornia powder
Muddle the pineapple and celery, add the rest, shake hard and double strain to a coupette rimmed with the salicornia dust.
Garnish with dehidrated pineapple and basil leaf.
