The Dreadnought

This recipe came as a brainstorm, while i was experimenting with mastiha liquer (one of my favourites), gin and cucumber. The result.. the dreadnought. A fresh, spicy, aromatic and refreshing drink with a gin kick that reminded me the ships constructed in the early 20th century,
Ingredients:
20ml Mastiha liquer (I used skinos mastiha spirit)
40ml London dry gin (I used beefeater for its gentler taste)
25ml Fresh lime juice
2 barspoons of pink pepper
2 thin slices of ginger
8 slices of cucumber (about 0,5cm each) or you can use a cucumber syrup, though it won't have the freshness of raw cucumber
Gunpowder tea & mint foam (recipe below)
Instructions:
Place the pink pepper, ginger and cucumber slices in shaker and muddle them. Place the rest of the ingredients in the shaker except the foam add ice and shake hard. Double strain in a chilled martini glass and top with Gunpowder tea foam.
Garnish with a leaf of mint and a thin cucumber slice.
For the foam:
150ml of thyme honey
2 gelatin leaves
400ml hot water
30 mint leaves
6 teaspoons of gunpowder tea
iSi cream siphon
2 cream chargers
In a container of your choice infuse 300ml hot water with the tea, the honey and the mint leaves for about 5 mins. Then strain them directly in the siphon
In one other container place the gelatin leaves and the rest 100ml of water and stir it until the gelatin disolves and place the mix in the siphon.
Shake the siphon lightly to mix the ingredients and put 2 cream chargers, one after the other.
I like to chill my siphon before i use it for at least 30mins . It gives a richer texture to the foam and doesn't warm your cocktail.
