Upon stepping foot into Rosa Negra, you feel like you've been transported to a hip cocktail lounge in Manhattan. The dim space is chic. It's moody. It's sexy. It isn't until you walk out onto one of the restaurant's wooden decks and look upon Nichupte Lagoon that you're reminded of where in fact you actually are: a Latin American restaurant located just shy of the Caribbean Sea.

Keeping in tune with the theme of the unexpected at Rosa Negra is their cocktail and spirits menu. Although the menu does boast an ample selection of margaritas and tequila cocktails, the gin selection is the true standout. If the bar cart filled with Tanqueray, Martin Miller's, and other craft gins wasn't indicator enough, Rosa Negra takes its gin seriously. It's invitingly jarring in a region where tequila (and Mezcal) reign supreme and there's no shortage of tropics-inspired cocktails.

In addition to an extensive selection of gin, the restaurant features three gin-centric cocktails on its menu: Malumba, Yucca, and De La Casa. A twist on the classic Gin & Tonic, the De La Casa is a Lushworthy combination of Boodles Gin, tonic, pineapple, lime, and peppermint. For a little less bite, opt for the Yucca, which incorporates cinnamon and Cardamom.

Given that it's quite hard to enjoy a craft, gin cocktail and not work up an appetite, Rosa Negra features an equally impressive food menu. Bites range from the tame (cheese tartlet, empandadas) to the titular (Japanese wagyu, Tasmanian smoked trout). Dessert is even more divine thanks to a medley of treats that include a Baked Alaska (flambéed at the table), Banana Cheesecake Pudding, and a Chocolate Sphere, which is also served tableside.
