2 oz Cognac

2 oz Rum

Teaspoon Cinnammon

Pinch of Sea Salt

1/2 oz Local Desert Honey

6 oz Milk

8 slices of Egg Rich Bread

stick of Kerry Bitter

Fois Gras Foam:

Blend 1/2 cup of Fois Gras, with 2 egg Whites, 1 oz of heavy cream, zest of one lemon, 1 oz of cognac, 1 oz Rum, salt & honey to taste

Garnish w/Spiced Puffed Rice & Pistacios, Local desert honey
