S t Valentine’s Day is so often considered another “Hallmark Holiday”, just another cynical conspiracy by big business to encourage us to part with our hard earned cash.

I say this year why not skip the “personalised” online card and mix up a truly delicious cocktail to spoil your loved one? OK, it might be a bit tricky to slip it through the post box, and it will be hard to deny it’s from you when you’re covered in chocolate. But hey – who cares!

St Valentine’s Rapture

50ml Eldorado 12yr Old Rum
25ml Chilli Chocolate Syrup*
6 Blackberries
6 Raspberries
5ml sugar syrup (to taste)
4 dashes Aphrodite Bitters
2 dashes Xocolatl Mole Bitters
Grated dark chocolate to garnish

To make the Chilli Chocolate Syrup:
100g dark (70% cocoa) chocolate
100ml boiling water
1 teaspoon chilli powder
4 drops vanilla essence
100g cocoa powder
1 pinch sea salt

  • First, gently melt the chocolate in a bowl over a pan of boiling water.
  • Add the water and combine.
  • Slowly stir in the chilli, cocoa and salt until mixed thoroughly.
  • Allow to cool.
  • In a Boston glass muddle the blackberries and raspberries with the sugar.
  • Add the rum, chilli chocolate syrup and the bitters. Dry shake vigourously.
  • Add ice, shake and fine-strain into a cocktail glass
  • Garnish with dark chocolate curls and thin slices of red chilli.
