Long the sole domain of Scottish distillers, single malt whiskey takes a distinctively native turn in the hands of Westland master distiller Matt Hoffman, who uses five varieties of malt to craft his core expression which spends a minimum of two years in new American oak and first-fill ex-bourbon casks. For the proper Westland tasting experience, take a sip and swallow and then, with your lips closed, breathe out purposefully through your nose. Also look for Westland’s sherry-wood finished and peated versions, both of which bear that same glorious cocoa-hazelnut character.
