Yellow Spot Irish Whiskey is now available in the US market, which should excite fans of its sibling whiskey, Green Spot. The single pot still whiskey is matured in a combination of American bourbon, Spanish sherry and Spanish Malaga casks. And unlike the Green Spot, which doesn’t specify its age, Yellow Spot carries an age statement of 12 years.

Each batch of Yellow Spot is made from a mash of malted and unmalted barley, which is then triple distilled in traditional copper stills. This, plus the aging, results in a rich, complex whiskey that balances sweetness with spice.

On the nose, Yellow Spot is full of pepper, baking spices and honey, plus a hint of sherried fruit and chocolate. Take a sip and that honey sweetness comes to the forefront alongside notes of coffee, oak and more chocolate. It’s rich and full-bodied on the palate, and it finishes long and pleasant with oak, fruit and barley bringing things to a close.

This is good whiskey, and a good representation of the flavors that can be achieved from single pot still distillation.
