This drink actually came out of the presentation first and then the drink came. I was at HomeSense and found the leave candle holders, I grabbed a couple of sets and put them into storage for a few months until I could figure out what to do with them.
Along with that, we invested in a edible ink printer to play with. To be honest, it is a very cheap and fun tool to have in your bar. Elevates your drinks without too much hard work, I think every bar should have one. Zinnia is a South American flower that many people probably have seen in their local park, popular and hardy it was the inspiration for the drink.
I made a pisco based, turmeric liqueur to use in the drink; I was chasing a subtle floralness which came from the Torres Pisco and liqueur. A little sweet bitterness from the Luxardo bitterness and brightness from the lemongrass ginger soda and all finished with lavender lemonade foam. This drink was visually stunning when it hit the table, I was very proud how it all came together all from the purchase of some random glassware.
Inspiration can come from anywhere, utilising all your senses to create a truly special drink is what we are here to do as bartenders.
ZINNIA BLOOMING
1 oz. Torres Pisco
1 oz. Turmeric Liqueur
½ oz. Luxardo Bitter
¾ oz. lemon juice
Dash of Foamer
Glass – Stemless Wine Glass
Method – Shake & double strain, top with lemongrass ginger soda to a 1/2” wash line and then top with lavender lemonade foam. Place printed picture on top.
Garnish – None
TURMERIC LIQUEUR
750mL Pisco
25g Turmeric
- Fine chopped turmeric and add to pisco
- Sit overnight
- Blitz and fine strain
- Measure volume and match with 50:50 simple syrup
LAVENDER LEMONADE FOAM
195mL Water
70mL Lavender Lemonade Syrup
10g powdered egg white
0.5g Xanthum gum
- Pour all in Ninja
- Blitz for 5 mins
- Pour into iSi and charge with N2O
