The Gimlet is one of my favorite cocktails, it's simplicity is the reason behind my love for it. You can make it with Rose's Lime Cordial (or a house created syrup), go all artisanal and make it with fresh lime juice and simple syrup; shaken or built on the rocks (how I prefer it at home). The drink can fit into your lifestyle at the drop of a jigger.

I fell in love with akvavit on a trip to Iceland years ago, I came back and created a local rendition with local distillers, Sheringham; out of Sooke on Vancouver Island. This opened the doors for me to then create this tasty little number, Bring Out the Gimlet. We serve this at Pagliacci's and it's a great example of not only a akvavit cocktail but a gimlet variation.

1 1/2 oz Sheringham Akvavit

1/2 oz Bols Ginger Liqueur

3/4 oz Carrot Lime Cordial


Glass - Large Coupe

Method - Shake and double strain

Garnish - Sweet Pickled Carrot Ribbon


Carrot Lime Cordial

500 g carrot juice

500 g lime juice

1000 g white sugar

Gently bring to heat until sugar is dissolved.
