Today we celebrate Earth Day. Started in 1970 as an environmental teach-in across America, it is now celebrated by over 192 countries worldwide as a way to bring awareness to important issue affecting our environment. Many folks plant trees, learn about sustainability efforts in their town, or pick up litter and beautiful their local parks as a way to celebrate and give back on this special day. limerence + liquor is a huge fan of volunteerism, so after you spend the day learning about at-home composting, treat yourself with a cocktail made from an organic, Earth-friendly spirit.

Organic spirits are nothing new, but finding a great tasting spirit that is also environmentally conscious is sometimes a bit of a challenge. Here are three "green" spirits that also taste great. And I've even included two easy cocktail recipe you can enjoy after you volunteer!

Benromach Organic Scotch Whisky

Hand made at Speyside’s smallest working distillery, Benromach Organic is the first Single Malt to be fully endorsed – raw ingredients, distillation, maturation and bottling – and certified organic to the rigorous standards set by the UK Soil Association. The whisky is matured in virgin American oak casks from environmentally managed forests which has adds a unique robustness and depth to the whisky.

Serving suggestion: Best enjoyed neat or with a splash of water.

Casa Noble Tequila

Casa Noble is handcrafted at a centuries-old distillery that respects the Earth and its natural resources. The agaves used are estate grown and allowed to fully mature up to fourteen years, a rarity with most tequilas. They are cooked in traditional stone ovens, naturally fermented and distilled three times. Not only is Casa Noble Tequila USDA certified but it is also one of the few products in Mexico to receive the highest official government green certification by the Mexican Federal Attorney for Environmental Protection.

Serving suggestion: I enjoy Casa Noble on the rocks, but it's also great for creating cocktails. A simple margarita made with natural ingredients is a delicious way to enjoy this tequila.

Casa Noble Organic Margarita

2 oz. Casa Noble Crystal

1 oz. Fresh Organic Lime Juice (or the juice of 1 whole lime)

¾ oz. Organic Agave Nectar

Combine all ingredients in a shaker with ice. Shake, strain and serve up or on the rocks. Garnish with a lime wheel. To salt rim – moisten rim of glass with lime and gently roll in a plate of kosher salt.

Ocean Vodka

Ocean Vodka is certified 100% USDA organic and is the only vodka in the world distilled from organic sugar cane. Made with water that comes from 3,000 feet below sea level off the coast of Kona in Hawaii, the vodka is not only gluten free but also rich in minerals. Of course, the water is desalinated before mixing it with distilled spirits made from organic rye and corn. Of note this Earth Day is the fact that the Smiths, who created Ocean Vodka, have made news with plans to open a Solar powered distillery on Maui - you can't get more environmentally friendly than that.

Serving suggestion: A simple cocktail is the best way to highlight this clean and crisp vodka.

Ocean Water
2 oz. Ocean Vodka
4 oz. Coconut Water
Muddled Mint Leaves
Dash of Organic Agave Syrup

Muddle mint leaves at the bottom of a shaker. Pour remaining ingredients into shaker over ice. Shake vigorously and pour in a short glass of ice. Garnish with a sprig of mint and a slice of lime or piece of coconut!
