When Foxtrot Tango Whisky was opening, I set out to have Snaiquiris on tap. But being on tap, I wanted to have them clarified, easy to pour and consistent. Enter a little molecular, a little ingenuity and you have a Clarified Strawberry Daiquiri on Tap.

The recipe is for a 10L corny keg, using beer gas to push through and serve it.

OLD ROSE DAQUIRI

6450mL Flor de Cana 7 Year Blanco

1615mL White sugar syrup

1615mL Lime Acid - Dave Arnold's Liquid Intelligence Recipe

215mL Ms. Better Bitters Strawberry

107mL Ms. Better Bitters Lime Leaf Bitters

Glass – Small coupe

Method – Pour neat

Garnish – Balsamic dried Strawberry
