Here's the fourth entry in the Eternal Riff cocktail series I'm doing with Chris at A Bar Above. It's also, our first foray into using molecular mixology in an episode. This is an interesting drink and the flavors are nice. It was difficult to get the pineapple cocktail foam to be the right texture.
Feelin' Gold
2oz reposado tequila (Zapopan)
.33oz lime juice
top with pineapple foam
Pineapple foam
6oz pineapple juice
2oz hot water
half a packet of gelatin
1oz agave
dash of cinnamon
Make sure you mix the gelatin into the hot water and dissolve it very well. Add all of the foam ingredients to a bowl and mix well. Pour into your whipper. Shake well. Charge with NO2 cartridge. Place in fridge for a few hours.
Add tequila and lime juice to a cocktail shaker. Shake well with ice. Strain into a rocks glass. Top with a good amount of pineapple foam.
