Ivory salmon crudo

Wood and Vine welcomes a new culinary director and executive chef, Chef Kyle Schutte, to its kitchen. Last seen at Roadhouse BBQ and The Corner Door, Chef Kyle brings his unique take on both modernist technique and Southern food to Hollywood. Perfect for a place known for its chicken and waffles. Wood and Vine has been consistently putting out good food and drinks for Pantages Theatre patrons and guests from the neighboring W Hotel as well as those seeking gastropub and cocktails.

He mentioned the menu right now reflects our seasonal bounty of stone fruit. Check out all those diced plums on the ivory salmon crudo. The plums are tossed in a lovely vinaigrette of strawberry vinegar and preserved lime.

I’ve heard of using cola for marinades but never thought about using lemon soda in tempura before! This is what Chef Kyle has done with the carrots served with the ricotta gnudi. The delicate batter is perfect for the crispy carrots. I also enjoyed the figs and bacon in this dish. It’s wonderfully savory and quite filling.

Black Manhattan

Black Manhattan

I had stopped into Wood and Vine as part of the LA Passport bar crawl. I’m glad we started with Wood and Vine first because it really set the tone of the cocktails. I had an excellent Black Manhattan here. I’ll have to come back to check out the new drinks from Bar Director Greg  Austin. Anyone that puts a Tommy’s Margarita on the menu gets a nod. And I rather like the name Brooklynesque for a cockail (rye, dry vermouth, Cocchi Americano, orange bitters, aromatic bitters).

Before I left, Chef Kyle told me I had to at least try some ice cream. For his bourbon ice cream, he uses two bottles of Buffalo Trace! Now imagine it drizzled with butterscotch. Woohoo! Whether there’s a show or not across the street, you should check out Wood and Vine because the food and drinks are worth more than a pre-theatre stop.
