Summer Cocktails "Le Verger" at Riviera 31 at Sofitel Los Angeles

It's Summer finally in LA! and we need an excuse to knock back an adult beverages after a long hot day! Cool down with some these Summer Cocktails from Riviera 31 lounge bar at the Sofitel Los Angeles.
Their Summer menu "Le Verger" was inspired by the orchard fields in the iconic French Riviera and brings fresh juices and ingredients to in their unique mixology program designed by Mixologist Ferrari Watts.
ZEPHYR
2 oz El Silencio Mezcal Espadin
1 oz Lime Juice
1 oz Agave Nectar
1 oz Mango Puree
Method: Mix all ingredients in mixing tin and shake with ice. Rim your glass with pink peppercorn and salt mixture
pour cocktail in glass over ice ball.

MYRTILLE SMASH
2 oz Bulleit Rye
1 oz Blueberry Jam
3/4 oz lemon
1/2 oz simple syrup
2 dashes of Black Walnut Bitters
Method: Add ingredients to mixing glass sans bitters, Shake well in mixing tin.
Double Strain over large ice cube into chilled old fashioned glass.
Garnish: 2 dashes of Black walnut bitters on top of the cocktail

PECHE MIGNON
2 oz Bacardi Rum
1 oz Peach Puree
3/4 oz simple syrup
splash of cranberry juice
1 oz egg white
1 oz Chateau Pey La tour Rose
Angostura bitters spray
Method: Add Rum, Peach Puree, egg white, simple syrup, and cranberry to mixing glass
Give a Hard Dry shake to ingredients for 5 seconds (shake without ice)
Add ice to shaker the shake vigourously to produce proper amount of foam to cocktail
Strain into chilled coupe glass
add rose wine to cocktail careful not to break the foam
use bitters in spray bottle to cover the top of cocktail in bitters (use of stencil is optional)

COUP DE SOLEIL
2 oz El Jimador Tequila
2 oz Carrot Juice
3/4 oz pineapple juice
3/4 oz grapefruit juice
3/4 oz Agave Nectar
2 slices Habanero
Method: Add ingredients to mixing glass
Shake well in mixing tin
strain over large ice cube into chilled old fashioned glass.
Garnish: Slice of Habanero on top of the ice cube
