There are so many categories of cocktails, but few are as universally beloved as the aperitivo. While the French might have their aperitifs, we focused on the Italian versions of pre-dinner drinks.

We sat down with Katie Parla, the author of Tasting Rome, and Naren Young of Dante to get their take on what makes a great aperitivo.
