Paloma Prohibida

This cocktail was inspired by the Mexican drink, the Paloma. A classic Paloma calls for tequila, lime, grapefruit soda and a pinch of salt. In our version we're using grape- fruit bitters instead of grapefruit soda, lemon in place of lime, then adding beer to add the effervescence it needs instead of soda. The honey syrup and cinnamon adds a little more complexity and sweetness.
Ingredients (for 2)
2 ounces Dos Equis lager
3 ounces Tanteo tequila
2 ounces honey syrup
1 ounce lemon juice
2 dashes grapefruit bitters
2 cinnamon sticks
Directions:
Combine 1 ounce honey with 1 ounce hot water and stir until honey is dissolved. Combine tequila, honey syrup, lemon juice and grapefruit bitters (2 dashes = 20 droplets) in the tin of a shaker. Add ice. Shake for 20 seconds. Open the shaker and add beer into the shaker tin. Swirl the contents of the shaker, then reattach the top and strain into martini glasses. Grate your cinnamon sticks over each drink with a microplane grater and garnish with the rest of the cinna- mon sticks.
