Sometimes you simply prepare a recipe because you have extra ingredients on hand that you need to use. I had fresh mint and watermelon left over after a cookout, and decided to use it to make this refreshing summer cocktail!

WATERMELON-MINT TEQUILA SOUR
Ingredients

  • 2 ounces blanco tequila
  • 1 ounce watermelon-mint simple syrup (recipe below)
  • 1 ounce lime juice
  • 1 pinch of salt

Instructions

  1. Add salt, lime juice, watermelon-mint simple syrup, and tequila to a cocktail shaker filled with ice.
  2. Shake until chilled and double strain into a coupe glass.
  3. Garnish with a mint leaf.

Notes:
If you want to make a non-alcoholic version, I’d suggest adding an extra half an ounce of the watermelon-mint simple syrup and serving it in a glass with ice and topped with club soda.


WATERMELON-MINT SIMPLE SYRUP
Ingredients

  • 2 cups watermelon juice
  • 1 cup sugar
  • 30 small leaves of fresh mint

Instructions

  1. Cut watermelon into 1” pieces and put into a blender. Six cups (¼ of watermelon) should yield around 2 cups of juice.
  2. Blend the watermelon and strain into a measuring cup.
  3. Add strained watermelon juice to a saucepan and simmer until reduced to 1 cup.
  4. Add sugar and stir to dissolve.
  5. Remove from heat and add mint. Steep for 10 minutes.
  6. Strain into storage container.

Notes
Adding mint too early or at too high of a temperature will result in the syrup tasting bitter and vegetal.
